Course Overview

The WSQ Basic Food Hygiene Course is a course accredited by the Singapore Food Agency ( SFA ). Participants will receive relevant knowledge and training on food safety and good hygiene practices. Upon completion of the course, participants will have the required competencies in the kitchen, hawker, food and beverage industries to meet the requirements of the Singapore Food Agency.

Under the SAFE Framework, all food handlers in non-retail food establishments must take and pass the WSQ Food Safety Level 1 course. Existing food handlers in non-retail food businesses can start taking the WSQ Food Safety Level 1 course now to meet the January 2023 requirement. Course Objective

Train food handlers to follow food and beverage safety and sanitation policies and procedures to ensure food safety.

  • The importance of working only when you are healthy

2) Use safe food ingredients

  • Use safe and wholesome food ingredients
  • Cleaning of food ingredients upon request

3) Safe food handling

  • Impact of safe defrosting on contamination prevention
  • The Importance of Preventing Cross Contamination
  • Precautions for handling high-risk foods
  • Precautions for handling ready-to-eat foods
  • Importance of maintaining food hygiene during food transportation
  • Environmental Public Health (Food Hygiene) Regulations
  • Meat grinder separating and labeling lamb, pork and beef

4) Storing food safely

  • How temperature affects bacterial growth in food
  • Importance of preserving and storing food at proper temperatures
  • Importance of maintaining proper storage conditions
  • The importance of ensuring that foods and items used in food preparation and service are kept away from potentially contaminated areas
  • The importance of inventory rotation, such as the First Expired First Out (FEFO) system
  • Environmental Public Health (Food Hygiene) Regulations

5) Keep utensils, equipment and service/storage areas clean

  • The importance of using the correct procedures during cleaning
  • Importance of using clean and safe utensils and equipment to prepare food
  • Importance of keeping your premises clean for safe food preparation

  • The Importance of Pest Control in Food Businesses
  • Environmental Public Health (Food Hygiene) Regulations

Who should attend
Any employee who plans to work in the F&B industry while handling and preparing food and beverages in an SFA licensed food establishment, i.e. kitchen managers, supervisors, chefs, sous chefs, cooks, kitchen assistants, food stall assistants and all food and beverage handlers.

  • Food handlers who prepare food and beverages in NEA-licensed food retail outlets and hawkers
  • Anyone who needs a food hygiene certificate, food handler certificate or food safety certificate

Minimum entry requirements

  • At least 16 years old
  • Able to speak, listen, write and read basic English or Mandarin
  • No work experience required

How long does a food hygiene course take?

The Food Hygiene course is a one-day course covering 7.5 hours (including assessment).

Assessment Method - Food Safety Course Level 1
At the end of the course, participants will be required to undergo a 1.5 hour assessment which will include a practical performance (PP), a written assessment consisting of multiple choice questions (MCQs) and short answer questions (SAQs).

To enable participants to know and understand the importance of food hygiene and safety when preparing or handling food

Food Hygiene Certificate

Participants who meet all requirements will be awarded a Statement of Attainment (SOA) certification by SkillsFuture Singapore (SSG).
