WSQ Food Hygiene Refresher Course Chinese is a course approved by the Singapore Food Agency ( SFA ). Participants will receive relevant knowledge and training on food safety and good hygiene practices. Upon completion of the course, participants will have the required competencies in the kitchen, hawker, food and beverage industry to meet the requirements of the Singapore Food Agency.

Under the SAFE Framework, all food handlers in non-retail food establishments must take and pass the WSQ Food Safety Level 1 course. Existing food handlers in non-retail food businesses can start taking the WSQ Food Safety Level 1 course now to meet the January 2023 requirement. 3) Safe food handling

  • Impact of safe defrosting on contamination prevention
  • The Importance of Preventing Cross Contamination
  • Precautions for handling high-risk foods
  • Precautions for handling ready-to-eat foods
  • Importance of maintaining food hygiene during food transportation
  • Environmental Public Health (Food Hygiene) Regulations
  • Meat grinder separating and labeling lamb, pork and beef

4) Storing food safely

  • How temperature affects bacterial growth in food
  • Importance of preserving and storing food at proper temperatures
  • Importance of maintaining proper storage conditions
  • The importance of ensuring that foods and items used in food preparation and service are kept away from potentially contaminated areas
  • The importance of inventory rotation, such as the First Expired First Out (FEFO) system

5) Keep utensils, equipment and service/storage areas clean

Who should attend

This is a refresher course for people who have attended the Basic Food Hygiene course .

Minimum entry requirements

  • At least 16 years old
  • Able to speak, listen, write and read basic English or Mandarin
  • No work experience required

Assessment Method - Food Safety Course Level 1 Refresher

At the end of the course, participants will be required to undergo an assessment which will include a practical performance (PP), a written assessment consisting of multiple choice questions (MCQs) and short answer questions (SAQs).
